    You forgot to make the daikon pickles that accompany Japanese curry. Pork adds more flavor than chicken in curry. A beef curry is also more elegant and sophisticated as well.

    Golden Curry is the worst. Vermont and Java are the way to go. Vermont for a sweet base, Java for savory/spicy. Follow Josh’s instructions but use either of these if you don’t have time to make your own roux and you will be happy.

    I like making a roux with curry powder, garam masala, and a little bit of cumin. Japanese curry was the first "actual dish" that I ever made on my own.

    As an American with an American wife (we’re both part white), we don’t do Euroweenie metrics. Not for cooking. Bridges, rockets, maybe baking, ok, yeah sure. Not for cooking. Glad you also do as @TastingHistory does, lists both measurement systems. Your own country’s traditions hurt no one and are still quite viable (not holding anyone back). The Metric system does not allow for personal tastes or nuances. It’s __too__ precise. Humans aren’t that way. Great stuff amigo.
